They're volunteers for the event, which is for charity. Many of them are either student chefs or designers. Some are media personalities. They reflect the real world instead of the artificial fashion world.
I wonder if the bits of chocolate had a lot of confectioner's wax in 'em? I know at Musikfest (In Bethlehem, PA), when they had chocolate sculptures, that's how they kept them from being all melty. :-) Of course, some nincompoop would try to eat a bit of the chocolate sculpture every freakin year...
Some dresses were lined with a body suit, and some were sprayed with a special pastry glaze that helped them to stand up to the heat, at least for a little while! There were pieces falling off all over the place by the end of the show! They usually had a lot of help getting dressed.
